I’ve never found the white part to be bitter. I like it better than the thin parts with less flesh-to-skin ratio. And it’s super easy to cut away just the seed area, tapping off any random seeds before slicing the big sections.
Plus you can throw some seeds into a solo cup of soil with a plastic bag over it pretending you’re going to grow some, then when you finally get the seedlings into expanding containers only to have your cats eat them every time. Oh well, at least they had fun.
